Nutella Florentine Sandwich Cookies – from Jessie Sheehan

These cookies are a bit of a departure for me, as I tend to want to make (and eat) thick and chewy (and, if you must know, jumbo-sized) cookies. And, honestly, these Florentines are none of those things, as they are delicate and thin and crunchy and petite(ish).  Not to mention the fact that they are also incredibly easy and fast to make (requiring no 24 hour rest in the fridge, as so many of my favorites require) and extremely tasty.  I love the combo of hazelnuts and chocolate, but if you’d rather just fill them with melted milk or dark chocolate, by all means have at it.  Finally, one could argue that a plate of Florentine cookies might not be the dessert of choice at your Super Bowl party, but I have brought the three die-hard football fans with whom I live, to their knees with these cookies.
