Roasted Pears with Caramel Sauce

Bonnie and I had some friends over for a dinner party the other night.  Since the meal itself was on the “heavy” side, Bonnie wanted to make  a lighter dessert.  This fit the bill perfectly (and easily)… AND IT WAS DELICIOUS!!


  • 4 pears, halved & cored (almost any variety and not too ripe)
  • 4 TBLS butter
  • 1 cup packed dark brown sugar
  • 1/4 cup coarsely chopped nuts (pick your favorite – walnuts, pecans, pistachios, etc.)
  • 1/2 to 1 cup crème fraîche


1.  Put oven rack in center position and preheat to 400 degrees.  Place the butter in a baking pan large enough to hold the pears in one layer.  Put the pan (without the pears) into the oven while it’s preheating to melt the butter.

2. Remove pan from oven and sprinke brown sugar over the butter, then place pears, cut side down, on top.  Bake until tender, about 30 minutes.

3. Remove pan from oven, turn pears over and baste with pan sauce.  Return to oven and bake until golden brown; about 10 minutes longer.

4.  Let cool slightly.  Transfer pears to dessert plates or bowls.  Top each half with a dollop of crème fraîche, drizzle with caramel pan sauce and sprinkle with nuts and serve.
