Beth’s Lemon Bars

Not that we need sugar this time of year, but Valentine’s Day is coming up and this is a sweet alternative to chocolate.

This is my friend Beth Ledy’s recipe and she often serves it for dessert when entertaining.  It is easy and delicious!


  • 1 cup + 2 TBLS sifted flour
  • ½ cup butter
  • ¼ cup powdered sugar (plus a little more for the top)
  • 2 eggs
  • 1 cup granulated sugar
  • ½ tsp baking powder
  • 3 TBLS lemon juice


For the crust:  Prepare greased 9×9 pan.  Mix 1 cup sifted flour with ½ cup butter and ¼ cup powdered sugar and press into greased pan.  Bake for 20 minutes at 325 degrees.  Keep the oven on.

For the top: Mix together 2 eggs,  2 TBL flour,  1 cup sugar,  ½ tsp baking powder and 3 TBL lemon juice.  Spread on top of the baked flour, butter and sugar mixture and bake for another 25 minutes. Take out and cool.

Sprinkle the top with sifted powdered sugar.

Cut into bars or squares to serve.
